Based on my professional experience I would like to inform those who do not know that in every scan of coronary paper that they do to you in shops, restaurants and entertainment, etc., the state is informed and registers (in log files or databases) where you went (from the ip of the store), what time (from the exact time of scanning / entry to gov.gr) and with what frequency of visit (from the analysis of time data).

At the same time, the state knows the traffic in shops and businesses and based on algorithms can judge the possibility of tax evasion of a business by comparing the traffic in the physical space with the issued documents. The state could also consider that an employee of a company located in Part A is unreasonable to go out for coffee continuously in another city in Part B, so there is a high probability of virtual employment or that a poor or bankrupt person can not go twice per week in a restaurant, so there is evidence of black income. Of course, the state can make thousands of other "crises" and cases that we can not imagine exactly from now on.
So imagine now that all of the above data can be accessed by a plethora of government officials, who within the vast public could target people and situations at any time. From a simple blackmail in the event that a citizen for his own reasons would not want to know that he has visited a particular place, to leaking data to criminal organizations of all kinds especially when there is financial incentive.

Because I saw interest in the previous post, I will mention more details. The QR code opens an internet link (url) that states your name and your vaccination status on a machine (server) of the ministry. The link is called from the ip (the only online ID) of the store or the physical space where you are scanned. The server of the ministry automatically records that at that moment, the ip (store) visited this link (url) where this specific name and this specific vaccination status are mentioned.
Keeping the logs of the above movements (log files or databases) for an alpha period of time is not optional. It is mandatory by law so that the authorities can refer to circumstances of commission of criminal acts. So if the state claims that it is deleting this data, it is simply illegal.
Here I note that Log files are kept not only by the server of the ministry but also by the server of the Internet provider (connection provider) of the store / physical space. COSMOTE, for example, if it is the Internet provider of the store in question, records that the ip (store clerk) has just visited the specific page of the ministry where the specific name and the specific vaccination status are listed.
All this data is super-sensitive and anyone who does not understand its importance is super-sensitive. Also what I mention above is a commonplace and self-evident assumptions even to novice network technicians or web developers who are just starting their careers. Nothing conspiratorial or strange. This is how systems work.
